My name is Colt Taylor. While I am originally from Surfside Beach Texas, I grew up in Essex Connecticut from the age of 11 on. My career involved traveling quite a bit as I was a working between NYC, Miami, and Los Angeles the past 21 years as a chef. I took my life savings in 2015, and began building my dream restaurant in Miami, and 6 months through the build out, my mother was diagnosed with Parkinson’s Disease. My father asked me to move back and help out in the transition, so I did, and partnered with him to build our restaurants; The Essex, Los Charros Cantina, and The Essex Market. My other half, Katey, used to live in Chester, and Cedar Lake is our daily stop for our dogs. We have watched this property for the past four years sitting there and dreaming and hoping of the potential of having a dream farm that could be built in a way to add to the town of Chester, and teach both our staff and hopefully partner with Camp Hazen to integrate the future of sustainability. I graduated from The University of Vermont with a degree in Community Development Through Sustainable Business Development. Now that we are going through the Covid Fiasco, As a restauranteur, we see how grosely impacted our food and supply chain has become. We want to add to the beauty of the area and bring the property to its true purpose of fertile beautiful crops that can help provide Our restaurants with what they need year round. The hope is to have all members of our team spend 1 full day a week working the land. As we have had an abundance of time throughout the pandemic, we have spent countless hours preparing to buy the land that we are searching for and make this dream a reality. I am already an avid believer and supporter of local product, and have a wonderful relationship with my primary, Digga Shacht, who owns Huntsbrook Farm in Waterford, CT. Digga inherited 800 acres from his parents in waterford, and gave 200 of them as a donation to start the famed Huntsbrook Day school for special needs children. In the past year I have helped integrate a curriculum that immerses these children in the farming experience, and we hope to have this concept grow. Unfortunately, his farm is a working farm that can only teach a limited amount, so the next level of this is creating a farm geared to teach from the start. The incredible benefits of the outdoors and the locally focused living are impactful on every level for these students. Anyhow, I am sorry for rambling, but Digga and I have agreed to partner to bring this farm concept to life, and for 16 years his farm tent has been the cornerstone tenant of the Chester Farmers Market. We are a small, family owned operation that has pure and good intentions in mind. While we own our property here in Essex for our restaurants, we are fortunate to not be one of the many restaurants forced to close due to the pandemic. We are strong and hard working, and believe that your property should be one that is given to the community to bring positivity and energy and GOOD to the world. Not held on to privately. With that said, It is not about conditions or a long drawn out process. We believe that this property is the right property for our mission.
